See, I had this big dinner plan for Valentine’s day. Filet mignon with asparagus and a chocolate treat for dessert. As my husband wasn’t at work on Thursday, we caved in and ordered food for lunch. We made a moderately good food decision considering the delivery options we had, but it was still more than we’re used to eat at lunchtime. All this to say that we really weren’t hungry enough for the big dinner plan. We did agree to at least enjoy dessert together.
I already knew about mug cakes but didn’t know there was such a thing as a Paleo version! I found Delighted Momma’s version and couldn’t wait to try it! The result was slightly dry (probably due to my lack of proper measurement) but nothing that a little Bloop vanilla frozen yogurt couldn’t fix! I made them in small ramekins instead of mugs…just because I wanted to make the evening “fancier”. Alright, I wasn’t trying to be fancy. In reality, I bought the ramekins at Target a few weeks ago and planned to make a Valentine dessert in them. I didn’t care what it would be, it simply had to fit in the dish. Now you know how I plan meals. 😉
Both cakes took a total of 10 minutes to prepare and cook. The heart-shaped strawberries were a must, obviously. The powdered sugar made me feel like I actually spent quality time working on this dessert. But who am I kidding? This was the easiest and quickest cake I have ever made.
While I was slaving in the kitchen (yeah, right!), my husband worked about as hard (hey, we both had great intentions!) to find a few tealights for the coffee table. It was simple, and perfect. All I needed. A good evening together, preparation teamwork, and a sweet treat!
I love the fact that this dessert is not only compliant to Paleo but it is also great to get a single portion. No need to worry about eating cake leftovers for days!
Whether you are alone or with a loved one on Valentine’s Day (on any other day of the year, if you ask me!), you can enjoy this sweet treat, without the guilt!
