With the temperatures drastically coming down this week, one would think that I would have started making chilis, roasts, soups, and everything in between. But somehow, even though I have really enjoyed warm sweaters, cozy blankets and autumn-scented candles, I have been eating the freshest lunches I’ve had in the longest while. There’s not a lot to write about as I’ve been making the same dish every day for lunch (and a few times for dinner as well!). Salads and wraps, everyone. That’s right, salads and wraps.
Wraps:
Wraps are such an easy meal, it’s a shame that I too often forget to make them. Last week, we made turkey tacos and we had a bunch of yummy flour tortillas left over. Although one day I’ll learn to make tortillas, the ones I used this time were store-bought. I grabbed whatever I could find in the fridge so most of my wraps look something like this: guacamole (I love this snack-size guacamole, just enough for one serving!) spread at the bottom, spinach, tomatoes, Mozzarella cheese, and chicken (from my leftover rotisserie chicken). It was so simple but super fresh, light, yet just filling enough at the same time.
Salads:
Salads are another thing that I tend to forget how much I love. I can eat salad every lunchtime for over a week and I won’t get tired of it. If I don’t eat it for a while though, it just goes way down on my list of meal options. But as soon as I have it again, I remember how much I enjoy it! Go figure. This week, my salads have been a mixture of spring mix, spinach, strawberries, goat cheese, walnuts and Newman’s Own balsamic vinaigrette dressing. It’s been so simple and so quick to make. I love to try out new dressing all the time and I have to say that I really like this balsamic one.
