Fruity Salmon

Yes, it’s been a while since my last post. But, hey, I had an excuse and it wasn’t laziness for once! I’ve had a bad cold for almost three days now and today, I am finally able to sit at the table and type without feeling like my head would explode. That’s what I get for bragging about not having a cold in the last year. Oh well… The most frustrating part is that I bought tons of yummy fruits last weekend and I am now worried that a lot of it will go to waste because all I wanted for the past few days was soup, frozen yogurt, and water. Thankfully, I got to cook an awesome meal before I started to be sick. And I got to used some fruits to make it!

On Monday afternoon, I had an urge to try cooking salmon again. The fridge was full of fruits so I looked for a recipe that might involve a salsa of some sort. I went off to the grocery store to buy a fresh fillet of salmon. I had a quick talk with the man at the seafood counter who taught me that farm-raised salmon is milder, therefore, recommended for people (like me) who are trying to like fish. I found an online recipe for salmon with pomegranate and orange salsa, which looked really good to me. I mostly followed the recipe although I was only making one fillet so I cut the recipe in half for the marinade and for the salsa.

As my sides, I made quinoa and sautéed broccoli and corn. It was my second time making quinoa but it was fairly easy. I added some lime juice, orange juice, and chopped cilantro to the water when boiling the quinoa to get a flavor similar to the fruit salsa used with the fish. For the broccoli, I simply browned some onions in a pan, and then added about a cup of broccoli and the corn kernels from one ear. I also threw in a spoonful of pomegranate. I sautéed it for a few minutes, until it looked nice and bright.

Each element of the meal was very easy to prepare. I did feel like it was a lot all together but, at the same time, it felt like it all went so well together that it was worth the effort. We both really like the fruits with the fish. The plate was colorful and everything was cooked right (I rarely get every single element right). So there, I am back to liking salmon! Well, at least if it is served with lots of fruits! 🙂
